Because of the coronavirus, food and beverage services has shifted its focus towards contactless services. Occupancy rates have dropped dramatically, and with that F&B have expanded their catering options to accommodate those who would prefer pick-up or delivery options. Others have completely shut down their restaurants and most properties are no longer offering room service.
While we’re not quite in the post-COVID world yet – things have started looking up. We have a clearer view of the horizon ahead. While the past few months have been focused on immediate strategy, we can now start outlining the future of F&B.
Revised menus
It’s likely that the properties that have re-opened have revised their menu since they’ve been forced to reconfigure their kitchen layout to accommodate for social distancing procedures. While buffet options will be last to resurface, restaurants will return with limited options.
For hotels that haven’t reopened their dining, slimming down the menu will be one of the first strategic moves they make before reopening. This will make it easier for hotel staff to meet demand without sacrificing quality.
Limited financial investment in banquets and events
There’s a debate on whether it’s a good idea to reopen banquet services. Even if staff follows all the procedural guidelines, they may not have many customers. In a world of Zoom meetings and remote offices, there is low demand for any sort of public gatherings. Even when the world reopens, this shift is likely to affect banquets and events long-term. As leaders look for cost-effective business models, there will be less investment in overall F&B operations.
Affordable options
Whether the establishment is a 5-star or a small café, the market is going to become price-driven. We went from a stable economy to mass layoffs. People aren’t as inclined to buy luxury or novelty experiences. Right now, people are looking for value. If you’re offering a brand-driven experience that caters to a demographic that has a smaller disposable income, you will find more success than if you maintain your previous standards.
New Hiring Outlook
Now more than ever, it’s important to find and retain the best staff. If any investment is going to be worth it, it’s going to be your staff. There has been an increase in task-force employees that have made talent-searching vital. Not only that, but the new COVID-19 regulations make it necessary to hire top-notch candidates.
